PASSARIELLO’S POSITIONS

We believe that educating employees on the operations of the restaurant helps them to understand their own jobs and the contributions they make to the Company as a whole. The following is a brief description of the duties associated with each position within the restaurant.


DELIVERY DRIVER

Responsible for delivery of menu items to our customers in a safe, efficient, and courteous manner. A clean and neat personal appearance is required. Delivery drivers must use their private vehicles for deliveries and are responsible for any physical damages to their vehicles. Other responsibilities include collecting money from customers and assisting in any side work (i.e. folding pizza boxes). The delivery driver reports to the Manager on Duty.


PREP COOK

Responsible for preparation of appetizers, sandwiches, pizza, pasta dishes, soup, salads, entrees, and desserts according to Passariello’s specifications.


A cook usually is assigned to a specific area (e.g. sauces, grill, etc.) on a shift. However, we encourage our cooks to be fully knowledgeable in all behind-the-line-areas so that scheduling is more flexible. Other responsibilities include: food rotation, setup and break-down, presentation of products, and cleaning utensils and general work area. The cook reports to the Kitchen Manager.


PIZZA MAKER

Responsible for preparing the pizza dough, making the pizzas, and ensuring the pizza line is completely stocked at all times. In addition, responsibilities include stocking the refrigerator with necessary items and ensuring all food items are stored according to Passariello’s specifications. The Pizza Maker also has an assistant that removes the pizza from the oven and cuts the pizza slices. The Pizza Maker and assistant report directly to the Kitchen Manager.


ASSISTANT PIZZA MAKER

Responsible for removing pizza from the oven, cutting pizza slices, and coordinating and assisting the counter assistant assigned to the pizza station. In addition, responsibilities include keeping the pizza area clean and stocked at all times. The Assistant Pizza Maker reports to the Kitchen Manager.


DOUGH MAKER

Responsible for daily production, storage, and rotation of dough. Other responsibilities include cleaning and maintenance of dough production equipment and cleaning dough area. Dough maker also may be required to receive, unload, and rotate products from vendors. The dough maker reports to the Kitchen Manager.


GREETER (SITE SPECIFIC)

Responsible for greeting of customers as they enter the restaurant.Will start the guest card process and explain how the Passariello’s guest card system works, ensuring complete customer satisfaction while interacting with the guests.


Furthermore, the Greeter will be responsible for directing the customer into the restaurant to begin their dining experience. The greeter reports to the Manager on duty.


CASHIER

Responsible for collecting and processing payment (including cash at the end of shift), and ensuring the dining experience was a satisfying one; answering the telephone according to Passariello’s procedures and general cleaning of work area. The cashier reports directly to the Manager on duty.


CALL CENTER / DISPATCH

Responsible for the operation of carry out register and accountable for sales proceeds equaling reported sales. Other responsibilities include answering phones, properly ringing in and bagging carry out orders, stocking supplies, assisting customers with large orders, handling credit card transactions if it applies for carry out orders and general cleaning of work area. Dispatch is also responsible for assigning drivers the deliveries to take in an appropriate time frame. The Call Center / Dispatch report to the Manager on duty.


SALAD MAKER

Responsible for preparing all salads for dine-in, carry out, delivery and catering. Ensuring food is properly portioned, rotated and stocked throughout the shift. Keeping all other items in the salad area stocked as well; such as mixing bowls, tongs, carry out containers, bags and plastic ware. Area needs to be kept clean and free of debris. The salad maker reports to the Kitchen Manager.


DISHWASHER

Responsible for all moving parts of a dish machine: separating, rinsing, loading, ensuring clean water, detergent is stocked, putting dishes away in designated area. Dishwashers are also responsible for trash removal, general cleaning, and unloading delivery truck from vendors. The dishwasher reports to the Manager on duty.


BUSSER

Responsible for cleaning of tables. Other duties include restocking supplies, ensuring that tables and chairs are clean and set according to Passariello’s specifications, bringing clean dishes from the dish room to designated stations, emptying trash containers, cleaning and/or vacuuming floor space, putting down chairs, dusting and verifying restrooms are stocked and clean at all times. The busser reports directly to the Manager on duty.


CAFÉ

Responsible for preparing and serving hot or cold beverages, such as coffee, and espresso drinks. The Café also includes sale of all desserts (cakes, cannoli's, etc.). Responsible for proper rotation, stocking, ordering all of cakes. Must keep area clean, stocked and set up for the next shift. The Café employee reports to the Manager on duty.


CARRY OUT

Responsible for the operation of carry out register and accountable for sales proceeds equaling reported sales. Other responsibilities include answering phones, properly ringing in and bagging carry out orders, stocking supplies, assisting customers with large orders, handling credit card transactions if it applies for carry out orders and general cleaning of work area. The Carry Out employee reports to the Manager on duty.


RUNNER

Responsible for the delivery of prepared food items to the take out area and dispatch center.

The runner reports to the Manager on duty.


COUNTER ASSISTANT

Responsible for greeting customers at the counter and taking their food orders. Other responsibilities include plating the food ensuring proper presentation according to Passariello’s specifications, answering customer questions on any menu item, and keeping work area clean. The counter person reports directly to the Kitchen Manager.


SAUTÉ COOK

Responsible for cooking all the dishes our guests eat. The Sauté cook reports directly to the

Kitchen Manager.
